Typed Letter Signed, with 11-line holograph postscript, to Susan Dresner, encouraging her to use ingenuity and persistence in order to secure an apprenticeship, recommending cooking schools, sending a list of Swiss schools [present], and, in the postscript, suggesting that she write magazine articles on food. Signed in red ink, the postscript written on verso, in blue ink. 2 pages, 8vo, "The French Chef" stationery, written on recto and verso of a single sheet; moderately faint bleedthrough affecting text of first page, horizontal folds.     "Good schools here are . . . The Culinary Institute of America . . . . The Cornell School of Hotel and Restaurant Management is also reported to be good. . . .
    "Abroad, the French have not done much about cooking training . . . . The Swiss, however, are renowned in the field . . . .
    The postscript: "How to break into the food establishment? . . . Start writing, and sending things in to magazines that publish food articles! There is really a dearth of qualified people who are really cooks as well as writers."
