Notes: first edition of the second actual cookbook by an african-american and the first written by a professional cook. The first actual cookbook by an African-American was What Mrs. Fisher Knows about Old Southern Cooking which was published in San Francisco in 1881. Robert Roberts' House-Servant's Directory is often cited as the first, but it is basically a guide to butlers with a few recipes included.
Estes who was born into slavery in Tennessee in 1857, wound up cooking for two Presidents (Harrison and Cleveland) and assorted European royals. He was one of the chief chefs for the Pullman Private Car Service in the 1880s. Culinary America 786.
